PREPARATION
Peel the ripe plantain and slice it into 1/2-inch thick rounds.
Heat the avocado oil in a medium non-stick skillet over medium-high heat.
Add the plantain slices to the skillet and fry for 2-3 minutes per side until they are golden brown and crispy, then remove and set aside.
