Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with creamy garlic cauliflower mash and tender steamed green beans, finished with a bright squeeze of lemon and a perfectly flaky texture.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
2 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tbsp Extra Virgin Olive Oil
2 tbsp Nonfat Plain Greek Yogurt
2 cloves Garlic
PREPARATION
Place the cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While the cauliflower steams, trim the green beans and steam them in a separate basket or during the last 5 minutes of the cauliflower cook time until bright green and crisp-tender.
Transfer the steamed cauliflower and garlic to a food processor or bowl; add the Greek yogurt, half of the olive oil, and a pinch of salt and pepper, then blend or mash until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side with a fresh lemon wedge if desired.
