Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of fresh lemon and a buttery glaze.
INGREDIENTS
7 oz Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tsp Grass-fed Butter
1 tbsp Plain Greek Yogurt
1 tsp Avocado Oil
2 cloves Garlic
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, heat avocado oil in a large skillet over medium-high heat.
Season salmon with salt and pepper, then sear for 4-5 minutes per side until the skin is crisp.
Remove salmon and in the same pan, sauté green beans and minced garlic until the beans are bright green and tender-crisp.
Drain the cauliflower and blend or mash with grass-fed butter and Greek yogurt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
