Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon fillet served over a creamy garlic cauliflower mash with a side of bright, tender-crisp steamed green beans.
INGREDIENTS
6 oz Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green Beans
1 tsp Olive Oil
1 tbsp Non-fat Greek Yogurt
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Bring a pot of water to a boil and steam the cauliflower florets for 10-12 minutes until very soft.
In the last 5 minutes of steaming the cauliflower, add the green beans to the steamer basket to cook until tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet and sear for 4-5 minutes per side until golden and cooked through.
Transfer the steamed cauliflower to a blender or food processor with the Greek yogurt and minced garlic, blending until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve alongside the green beans with a squeeze of fresh lemon juice.
