Seared Salmon Filet with Roasted Broccoli and Garlic Mashed Cauliflower
Crispy pan-seared salmon served over a bed of creamy garlic cauliflower mash with a side of tender roasted broccoli.
INGREDIENTS
6 oz Salmon Fillet
1 cup Broccoli florets
1.5 cups Cauliflower florets
1 tsp Extra Virgin Olive Oil
2 tbsp Nonfat Plain Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of sea salt, then spread them on the baking sheet.
Roast the broccoli for 15-20 minutes until the edges are tender and slightly charred.
While the broccoli roasts, steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
Transfer the steamed cauliflower to a food processor or bowl; add the Greek yogurt, minced garlic, and salt, then blend or mash until smooth and creamy.
Season the salmon fillet with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crispy and the fish is cooked through.
Plate the salmon over a generous scoop of the garlic cauliflower mash and serve with the roasted broccoli.
