Garlic Shrimp Scampi with Linguine
Succulent shrimp sautéed in a bright, buttery garlic sauce and tossed with whole grain linguine for a zesty and satisfying meal.
INGREDIENTS
8 oz Large shrimp
1.5 oz Whole grain linguine
1 medium Zucchini
0.5 tbsp Extra virgin olive oil
0.5 tbsp Grass-fed ghee
3 cloves Garlic
0.25 tsp Red pepper flakes
0.25 cup Fresh parsley
1 medium Lemon
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a large pot of salted water to a boil and cook the whole grain linguine according to package directions until al dente.
While the pasta cooks, use a spiralizer to turn the zucchini into long noodles and set them aside.
In a large skillet over medium heat, melt the ghee with the olive oil until shimmering.
Add the minced garlic and red pepper flakes to the skillet, sautéing for about 1 minute until highly fragrant.
Increase the heat to medium-high and add the shrimp, seasoning them with sea salt and black pepper.
Cook the shrimp for 2 to 3 minutes per side until they are pink, opaque, and slightly curled.
Drain the linguine and add it to the skillet along with the raw zucchini noodles.
Squeeze the juice of the entire lemon over the mixture and toss everything together for 1 to 2 minutes until the zucchini is just tender.
Remove the skillet from the heat, garnish with freshly chopped parsley, and serve immediately.
