Seared Salmon Fillet with Roasted Green Beans and Sweet Potato Mash
Pan-seared salmon served with creamy mashed sweet potato and oven-roasted green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
4 oz Salmon Fillet
100g Sweet Potato
100g Green Beans
1 tsp Extra Virgin Olive Oil
1 tbsp Lemon Juice
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until tender.
Toss the green beans with half of the olive oil, salt, and pepper on a baking sheet and roast for 15 minutes until slightly charred.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 2-3 minutes until cooked through to your preference.
Drain the sweet potatoes and mash them thoroughly, adding a splash of hot water if needed for a creamy consistency.
Plate the salmon alongside the sweet potato mash and roasted green beans, finishing with a fresh squeeze of lemon juice over the fish.
