Garlic Parmesan Mashed Potatoes
Boiled Russet potatoes whipped with creamy Greek yogurt and savory parmesan, topped with golden-brown garlic turkey for a comforting and protein-packed meal.
INGREDIENTS
1 medium Russet potato
4.5 oz Ground turkey (93% lean)
0.25 cup Non-fat Greek yogurt
1 tbsp Parmesan cheese
1 tsp Ghee
2 cloves Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh chives
PREPARATION
Peel and cube the Russet potato, then place in a pot of cold salted water.
Bring the water to a boil and cook for 12 to 15 minutes until the potato chunks are fork-tender.
While potatoes boil, heat a skillet over medium heat and add the ground turkey.
Cook the turkey until browned, breaking it into small crumbles, then stir in the minced garlic for the last 2 minutes.
Drain the potatoes and return them to the pot; add the ghee, Greek yogurt, parmesan cheese, sea salt, and black pepper.
Mash the potato mixture until smooth and creamy, then fold in the cooked garlic turkey.
Transfer to a bowl and garnish with freshly chopped chives before serving.
