1 medium russet potato
1 tbsp ghee

2 cloves garlic

PREPARATION
Peel and cube the russet potato into 1-inch pieces.
Place potato cubes in a pot of cold water, bring to a boil, and cook for 12-15 minutes until fork-tender.
While potatoes cook, season the chicken breast with half of the sea salt and black pepper.
Heat a skillet over medium-high heat with 0.5 tbsp of ghee and sear the chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
Mince the garlic and add it to the skillet during the last 2 minutes of cooking the chicken to soften and brown slightly.
Drain the potatoes thoroughly and return them to the warm pot.
Add the remaining 0.5 tbsp of ghee, Greek yogurt, sautéed garlic, and remaining salt and pepper to the potatoes.
Mash until smooth and creamy, then fold in the finely chopped fresh chives.
