Bacon Cheddar Stuffed Potatoes
Oven-roasted potato skins filled with a savory mix of lean turkey, sharp cheddar, and smoky bacon for a creamy and comforting finish.
INGREDIENTS
1 medium Russet potato
2 slices Turkey bacon
2 oz Ground turkey
0.75 oz Sharp cheddar cheese
0.5 cup Plain non-fat Greek yogurt
1 tbsp Green onions
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
1 tsp Olive oil
PREPARATION
Preheat oven to 400°F.
Scrub the potato, prick with a fork, rub with olive oil and a pinch of the sea salt, then bake for 45-50 minutes until tender.
While baking, cook the ground turkey in a skillet over medium heat until browned, seasoning with a portion of the salt, pepper, and garlic powder.
Cook the turkey bacon in the same skillet until crisp, then chop into small pieces.
Slice the baked potato in half lengthwise and scoop out the center, leaving a thin shell.
In a bowl, mash the potato flesh with the Greek yogurt, cooked ground turkey, half of the cheddar, and half of the bacon pieces.
Stuff the mixture back into the potato shells and top with the remaining cheese and bacon.
Bake for another 5-10 minutes until the cheese is bubbly and golden.
Garnish with sliced green onions before serving.
