Garlic Herb Roasted Chicken Thighs
Oven-roasted chicken thighs seasoned with aromatic garlic and herbs, served with caramelized sweet potatoes and crisp broccoli for a succulent and balanced meal.
INGREDIENTS
7 oz Boneless skinless chicken thighs
0.5 tbsp Extra virgin olive oil
2 cloves Garlic
0.5 tsp Dried rosemary
0.5 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1 cup Broccoli florets
0.5 cup Sweet potato
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Peel and cube the sweet potato into half-inch pieces, then toss them on the baking sheet with half of the olive oil and a pinch of sea salt.
Roast the sweet potatoes for 10 minutes to give them a head start on caramelizing.
While potatoes roast, mince the garlic and combine it in a small bowl with the remaining olive oil, rosemary, thyme, salt, and pepper.
Pat the chicken thighs dry and rub the garlic-herb mixture evenly over all sides of the meat.
Remove the baking sheet from the oven, move the potatoes to one side, and add the chicken thighs and broccoli florets to the empty space.
Return the sheet to the oven and roast for another 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F and the vegetables are tender.
Let the chicken rest for 5 minutes before serving to ensure the juices redistribute for a moist finish.
