PREPARATION
Season the chicken breast with sea salt and black pepper on both sides.
Grill or pan-sear the chicken over medium-high heat until fully cooked, then slice into thin strips.
Brush the outside of each bread slice with the extra virgin olive oil.
On the non-oiled side of one slice, layer the grilled chicken strips, fresh mozzarella slices, and tomato slices.
