Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared wild salmon paired with a smooth cauliflower purée and garlic-scented green beans, finished with a bright and zesty squeeze of fresh lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
1 cup Cauliflower florets
1 cup Fresh Green Beans
2 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Fresh Lemon Juice
1/4 tsp Sea Salt
1/4 tsp Black Pepper
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, about 8 to 10 minutes.
While the cauliflower steams, pat the salmon fillet dry with a paper towel and season with half of the salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4 to 5 minutes until the skin is golden and crisp.
Flip the salmon carefully and cook for another 3 to 4 minutes until the fish is opaque and flakes easily, then remove from heat and drizzle with lemon juice.
In a separate small skillet, heat the remaining teaspoon of olive oil over medium heat and sauté the green beans and minced garlic for 5 to 6 minutes until crisp-tender.
Drain the steamed cauliflower and place it in a food processor or use an immersion blender to purée with the remaining salt and pepper until smooth and creamy.
Spread the cauliflower mash onto a plate, top with the seared salmon fillet, and serve the garlic green beans alongside.
