Pan-seared salmon served over creamy mashed sweet potatoes and garlic-scented spinach, finished with a squeeze of bright lemon and a crispy skin.
INGREDIENTS
6 ounces Salmon Fillet
150 grams Sweet Potato
2 cups Fresh Spinach
2 teaspoons Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato then boil in salted water until tender about 12 minutes.
Drain the sweet potato and mash until smooth seasoning with a pinch of salt and pepper.
Pat the salmon fillet dry with paper towels and season both sides with salt and pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes per side until the skin is golden and crispy.
Remove the salmon and add the remaining teaspoon of oil to the pan along with the minced garlic.
Add the spinach to the skillet and sauté for 1-2 minutes until just wilted.
Serve the salmon over the sweet potato mash and sautéed spinach with a fresh lemon wedge.
