6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green Beans
2 tbsp Non-fat Greek Yogurt
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a covered pot with a small amount of water until they are very tender, approximately 10 minutes.
Drain the cauliflower well and place it in a food processor with the non-fat Greek yogurt and a pinch of sea salt, blending until completely smooth and velvety.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the skin is crisp and the flesh is cooked through.
Remove the salmon from the pan and add the remaining oil, green beans, and minced garlic to the same skillet.
Sauté the green beans for 3 to 5 minutes until they are bright green and crisp-tender.
Plate the cauliflower mash first, top with the seared salmon, and serve the garlic green beans on the side.
