Seared Salmon Fillet with Lemon-Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served with crisp lemon-garlic green beans and nutty brown rice, finished with a bright squeeze of fresh citrus.
INGREDIENTS
7.6 oz Salmon Fillet
0.4 cup Cooked Brown Rice
1.5 cups Green Beans
0.5 tsp Olive Oil
1 clove Garlic
1 tbsp Lemon Juice
PREPARATION
Season the salmon fillet with a small pinch of sea salt and black pepper.
Heat a non-stick skillet over medium-high heat with half of the olive oil.
Place the salmon skin-side down and sear for 4-5 minutes until the skin is golden and crisp.
Carefully flip the salmon and cook for another 3-4 minutes until cooked through, then set aside to rest.
In the same skillet, add the remaining oil and the trimmed green beans with a tablespoon of water.
Cover and steam the beans for 3 minutes, then remove the lid and add minced garlic.
Sauté the beans and garlic for 1-2 minutes until the garlic is fragrant and beans are tender-crisp.
Turn off the heat and stir in the fresh lemon juice to coat the beans.
Serve the seared salmon alongside the warm brown rice and the lemon-garlic green beans.
