PREPARATION
Heat one teaspoon of olive oil in a non-stick skillet over medium heat and sauté the spinach until wilted.
Remove spinach from the pan and set aside.
Wipe the pan and add the remaining teaspoon of olive oil.
Pour the egg whites into the skillet and cook undisturbed until the edges begin to set.
Spread the sautéed spinach and cottage cheese over one half of the egg whites.
Carefully fold the omelette in half and cook for another minute until the center is firm.
Serve alongside a slice of toasted whole wheat bread topped with sliced avocado.
