Grilled Steak with Herb Butter
Juicy grass-fed sirloin grilled to perfection and topped with a fragrant herb-infused ghee, served with roasted sweet potato and vibrant asparagus.
INGREDIENTS
10 oz Grass-fed sirloin steak
1 tbsp Ghee
0.5 tsp Minced garlic
1 tsp Fresh parsley
1 tsp Fresh chives
1 medium Sweet potato
1 cup Asparagus spears
0.5 tbsp Extra virgin olive oil
0.5 tsp Sea salt
0.5 tsp Black pepper
PREPARATION
Preheat your grill to medium-high heat to ensure a proper sear and even cooking.
In a small bowl, mash the ghee with minced garlic, parsley, and chives until well combined to create the herb compound butter.
Slice the sweet potato into 1/2-inch thick rounds and toss them in a bowl with the olive oil and half of the sea salt and black pepper.
Season both sides of the sirloin steak evenly with the remaining sea salt and black pepper.
Place the sweet potato rounds on the grill and cook for 5-6 minutes per side until they are tender and show clear grill marks.
Grill the steak for 4-5 minutes per side for a medium-rare finish, or until it reaches your desired level of doneness.
During the last 4 minutes of the steak's cooking time, place the asparagus spears on the grill and cook until vibrant and tender-crisp.
Remove the steak from the grill and immediately top with the prepared herb ghee; let the meat rest for 5 minutes before slicing and serving.
