Spicy Gochujang Pork Bowl
Sautéed pork tenderloin glazed in a pungent gochujang sauce, served over cauliflower rice with a silky soft-boiled egg and crisp vegetables.
INGREDIENTS
6 oz Pork tenderloin
1 tbsp Gochujang
1 tbsp Tamari
1 tsp Sesame oil
1 cup Cauliflower rice
1 large Egg
0.5 cup Kimchi
0.5 cup Cucumber
1 tsp Sesame seeds
0.25 tsp Garlic powder
0.25 tsp Ginger powder
1 stalk Green onion
PREPARATION
Bring a small pot of water to a boil and cook the egg for 6 minutes for a jammy yolk, then transfer to an ice bath.
In a small bowl, whisk together the gochujang, tamari, garlic powder, and ginger powder until smooth.
Heat the sesame oil in a large skillet over medium-high heat and sear the cubed pork tenderloin until golden brown on all sides.
Pour the gochujang sauce over the pork and toss to coat, simmering for 2 minutes until the glaze is thick and glossy.
Steam the cauliflower rice in a separate pan or microwave until tender.
Assemble the bowl by layering the cauliflower rice, spicy pork, kimchi, sliced cucumber, and the peeled soft-boiled egg.
Garnish with sliced green onion and sesame seeds before serving.
