4 oz Sirloin steak
1 bunch Asparagus
0.25 tbsp Ghee
2 cloves Garlic
1 sprig Fresh rosemary
0.5 tsp Sea salt
0.25 tsp Black pepper
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F and trim the tough, woody ends off the asparagus spears.
Pat the sirloin steak completely dry with paper towels and season both sides generously with the sea salt and black pepper.
Place the asparagus on a large baking sheet, toss with half of the ghee, and roast for 12 minutes until tender and slightly charred.
While the asparagus roasts, heat a heavy cast-iron skillet over medium-high heat and add the remaining ghee.
Place the steak in the hot skillet and sear for 4 minutes per side, adding the smashed garlic cloves and rosemary sprig to the pan during the final 2 minutes.
Tilt the pan slightly and use a spoon to continuously baste the steak with the melted garlic-herb ghee as it finishes cooking.
Remove the steak from the pan and let it rest for 5 minutes before slicing against the grain and serving with the roasted asparagus and a fresh lemon squeeze.
