Sesame-Ginger Tofu Stir-Fry with Vegetables
Extra-firm tofu and crisp vegetables are wok-seared in a fragrant sesame-ginger glaze for a vibrant, protein-packed meal.
INGREDIENTS
6 oz Extra-firm tofu
0.5 cup Shelled edamame
1 cup Broccoli florets
0.5 cup Red bell pepper
0.5 cup Sugar snap peas
0.5 tsp Toasted sesame oil
2 tbsp Tamari
1 tbsp Fresh ginger
2 cloves Garlic
1 tsp Rice vinegar
0.25 tsp Red pepper flakes
1 tsp Sesame seeds
1 tbsp Water
PREPARATION
Press the extra-firm tofu between paper towels for 15 minutes to remove excess moisture, then cut into 1-inch cubes.
In a small bowl, whisk together the tamari, minced ginger, minced garlic, rice vinegar, red pepper flakes, and water to create the stir-fry sauce.
Heat the toasted sesame oil in a large non-stick wok or skillet over medium-high heat.
Add the tofu cubes to the pan in a single layer and sear for 3-4 minutes per side until golden brown and slightly crispy.
Toss in the broccoli florets, sliced red bell pepper, sugar snap peas, and shelled edamame, stir-frying for 5 minutes until the vegetables are tender-crisp.
Pour the prepared sauce over the tofu and vegetables, tossing constantly for 1-2 minutes until the sauce thickens and coats everything evenly.
Remove from heat and garnish with sesame seeds before serving.
