Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared sockeye salmon served over creamy mashed sweet potatoes with a side of garlic-sautéed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 ounces Sockeye Salmon Fillet
150 grams Sweet Potato
150 grams Green Beans
1 teaspoon Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Peel and cube the sweet potato, then boil in water for 12-15 minutes until tender.
Drain the sweet potatoes and mash them until smooth, seasoning with a pinch of sea salt.
Pat the salmon fillet dry and season both sides with salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 minutes per side until the skin is crisp.
In a separate pan, heat the remaining oil and sauté the green beans with minced garlic for 5-7 minutes until tender-crisp.
Plate the salmon over the sweet potato mash and serve with the garlic green beans.
