Grilled Seitan Steaks with Garlic Green Beans and Chickpeas
Seitan steaks grilled with savory tamari and paired with tender chickpeas and garlic-sautéed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
5 ounces Seitan, sliced into steaks
1/2 cup Canned Chickpeas, rinsed and drained
1.5 cups Fresh Green Beans, trimmed
1 teaspoon Extra Virgin Olive Oil
1 tablespoon Tamari or Soy Sauce
2 cloves Garlic, minced
1/2 Lemon, juiced
PREPARATION
Whisk together the tamari and half of the minced garlic in a small bowl, then brush the mixture onto the seitan steaks.
Heat a grill pan or outdoor grill over medium-high heat and lightly coat with cooking spray.
Grill the seitan steaks for 3-4 minutes per side until charred grill marks appear and the edges are slightly crisp.
While the seitan grills, heat the olive oil in a large skillet over medium heat.
Add the green beans and a splash of water to the skillet, covering for 2 minutes to steam-soften.
Remove the lid, add the chickpeas and the remaining garlic, and sauté for 3-5 minutes until the beans are tender-crisp and chickpeas are warmed through.
Remove from heat and toss the vegetables with fresh lemon juice.
Serve the grilled seitan steaks alongside the garlic green bean and chickpea medley.
