Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served over creamy mashed cauliflower with garlic-sauteed green beans and a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
0.5 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a basket over boiling water for 10-12 minutes until very soft.
Drain the cauliflower well and transfer to a blender or food processor with the ghee and a pinch of sea salt, blending until smooth and creamy.
Blanch the green beans in boiling water for 3 minutes, then drain.
Heat a skillet over medium heat with a splash of water and the minced garlic, adding the green beans and sautéing until tender-crisp.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the olive oil in a separate non-stick skillet over medium-high heat.
Place the salmon skin-side down in the hot pan and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 2-3 minutes until the desired doneness is reached.
Plate the creamy cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
