Garlic Butter Seafood Boil with Corn and Potatoes
Succulent shrimp and tender vegetables simmered in a fragrant garlic-herb broth and finished with a silky, spiced butter drizzle.
INGREDIENTS
8 oz shrimp
0.5 ear corn on the cob
2 small red potatoes
0.25 tbsp grass-fed ghee
2 cloves garlic
1 tsp Old Bay seasoning
0.5 whole lemon
0.25 tsp sea salt
0.25 tsp black pepper
1 tbsp fresh parsley
PREPARATION
Fill a large pot with water and bring to a boil. Add the sea salt and half of the Old Bay seasoning.
Add the small red potatoes to the boiling water and cook for 10-12 minutes until they are just starting to become tender.
Add the corn on the cob to the pot and continue boiling for another 5 minutes.
Add the shrimp to the pot and cook for 2-3 minutes until they are pink and opaque, then drain the entire pot.
In a small saucepan or the same large pot, melt the grass-fed ghee over medium heat.
Stir in the minced garlic and the remaining Old Bay seasoning, cooking for 1 minute until fragrant.
Return the shrimp, corn, and potatoes to the pot and toss thoroughly to coat in the garlic butter mixture.
Garnish with fresh parsley and a squeeze of fresh lemon juice before serving.
