Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon with a perfectly crisp skin served over brown rice and garlic green beans, finished with a bright squeeze of lemon.
INGREDIENTS
6.5 ounces Salmon Fillet
0.5 cup cooked Brown Rice
1.5 cups Green Beans
1 teaspoon Avocado Oil
2 cloves Garlic
1 tablespoon Lemon Juice
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Pat the salmon fillet dry with a paper towel and season with a pinch of salt and pepper.
Heat half of the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 3-4 minutes until cooked through then remove from the pan.
In the same skillet add the remaining oil and sauté the green beans and minced garlic until tender-crisp.
Serve the seared salmon over the brown rice with a side of garlic green beans and a fresh squeeze of lemon juice.
