Coffee-Rubbed Steak with Roasted Asparagus
Pan-seared sirloin steak coated in a smoky coffee rub and served with crisp-tender roasted asparagus for a savory, bold-flavored dinner.
INGREDIENTS
6 oz Sirloin steak
1.5 cup Asparagus
1 tbsp Olive oil
1 tbsp Finely ground coffee
0.5 tsp Chili powder
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Toss the asparagus on the baking sheet with half of the olive oil and a pinch of the salt and pepper.
In a small bowl, whisk together the ground coffee, chili powder, garlic powder, and the remaining sea salt and black pepper.
Pat the sirloin steak dry with paper towels and rub the coffee spice mixture firmly into both sides of the meat.
Heat the remaining olive oil in a cast-iron skillet over medium-high heat until the oil is shimmering.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare, or until it reaches your preferred doneness.
While the steak is searing, place the asparagus in the oven and roast for 10-12 minutes until tender and slightly charred.
Remove the steak from the skillet and let it rest on a cutting board for 5 minutes before slicing against the grain and serving with the asparagus.
