Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over garlic-sautéed green beans and cauliflower mash, whipped until smooth and creamy.
INGREDIENTS
6 ounces Salmon Fillet
2 cups Cauliflower Florets
1.5 cups Fresh Green Beans
2 tablespoons Non-fat Plain Greek Yogurt
1 teaspoon Avocado Oil
1 teaspoon Ghee
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook until very tender, about 10-12 minutes.
While cauliflower steams, heat a large skillet over medium heat with half of the avocado oil and sauté green beans and minced garlic until crisp-tender.
Remove beans from the skillet and set aside, then increase heat to medium-high and add the remaining oil.
Season the salmon fillet with salt and pepper, then sear in the hot skillet for 4-5 minutes per side until golden and cooked through.
Transfer steamed cauliflower to a food processor or bowl and blend with Greek yogurt, ghee, and a pinch of salt until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve alongside the garlicky green beans.
