Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served over creamy garlic-infused cauliflower mash with tender-crisp green beans and a bright, zesty finish.
INGREDIENTS
6.5 oz Salmon Fillet
2.5 cups Cauliflower florets
1.25 cups Fresh Green Beans
2 tsp Extra Virgin Olive Oil
1 tbsp Nonfat Plain Greek Yogurt
1 clove Garlic, minced
Salt, black pepper, and lemon wedges to taste
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of the cauliflower cooking time until they are tender-crisp.
While vegetables steam, pat the salmon dry with a paper towel and season both sides with salt and pepper.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until golden and cooked through.
Transfer the steamed cauliflower and garlic to a bowl or food processor; add the Greek yogurt, remaining 1 teaspoon of olive oil, and a pinch of salt and pepper, then mash or blend until smooth.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve alongside the steamed green beans with a fresh lemon wedge.
