6 oz Salmon Fillet
2.5 cups Cauliflower florets
100g Asparagus spears
1 tsp Extra Virgin Olive Oil
2 tbsp Nonfat Greek Yogurt
1 clove Garlic, minced
PREPARATION
Bring a pot of water to a boil and place a steamer basket on top.
Add cauliflower florets to the steamer and cook for 10-12 minutes until very tender.
Add asparagus to the steamer during the last 4 minutes of cauliflower cooking time.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat.
Place salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crisp.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached.
Transfer cooked cauliflower to a food processor or bowl with minced garlic and Greek yogurt.
Blend or mash until the cauliflower reaches a smooth and creamy consistency.
Serve the seared salmon over the cauliflower mash with the steamed asparagus on the side.
