Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon served over creamy mashed sweet potatoes and garlic-sautéed green beans, finished with a squeeze of lemon for a bright, zesty touch.
INGREDIENTS
6 oz Salmon Fillet
150g Sweet Potato
1 cup Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then place in a pot of boiling water and cook until tender, about 12-15 minutes.
Drain the sweet potato and mash thoroughly until smooth, seasoning with a pinch of sea salt.
While the potato cooks, heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then place it in the skillet skin-side down.
Sear the salmon for 4-5 minutes per side until the skin is crispy and the flesh is cooked to your preference.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the remaining olive oil, trimmed green beans, and minced garlic.
Sauté the green beans for 5 minutes until they are bright green and tender-crisp.
Plate the sweet potato mash, top with the seared salmon, and serve the garlic green beans alongside.
