PREPARATION
Preheat your oven to 400°F (200°C).
Peel the sweet potato and slice into very thin rounds using a mandoline or a sharp knife.
Heat the olive oil in a skillet over medium heat and sauté the minced garlic and ground turkey until the meat is browned.
Stir in the tomato puree, dried sage, sea salt, black pepper, and spinach until the greens are wilted.
In a small oven-safe baking dish, layer sweet potato slices to completely cover the bottom.
