Pan-seared wild salmon served over a silky garlic cauliflower mash with steamed green beans and a bright squeeze of lemon.
INGREDIENTS
5.5 oz Wild Sockeye Salmon
300g Cauliflower florets
150g Green beans
2 tbsp Non-fat Greek yogurt
1 tbsp Olive oil
1 clove Garlic
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
Add the green beans to the steamer during the last 5 minutes of cooking until they are vibrant and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crispy, then flip and cook for another 2-3 minutes.
While the salmon cooks, transfer the steamed cauliflower to a blender or food processor with the Greek yogurt and minced garlic.
Pulse the cauliflower mixture until it reaches a smooth, silky consistency.
Serve the seared salmon over a generous bed of the garlic cauliflower mash with the steamed green beans on the side.
