Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet paired with garlicky green beans and creamy mashed sweet potato, finished with a squeeze of bright lemon and toasted garlic.
INGREDIENTS
8 oz Wild Atlantic Salmon
150g Sweet Potato, peeled and cubed
100g Fresh Green Beans, trimmed
1/2 tbsp Ghee
1/2 tbsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1/2 Lemon, juiced
Salt and Black Pepper to taste
PREPARATION
Place the cubed sweet potatoes in a pot of salted water and bring to a boil, cooking for 12-15 minutes until fork-tender.
Drain the sweet potatoes and mash them thoroughly until smooth, adding a pinch of salt and pepper.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the ghee in a stainless steel or cast-iron skillet over medium-high heat.
Place the salmon in the skillet skin-side down and sear for 4-5 minutes until the skin is crisp, then flip and cook for an additional 2-3 minutes.
In a separate small skillet, heat the olive oil over medium heat and add the green beans and minced garlic.
Sauté the green beans for 5-6 minutes until they are tender-crisp and the garlic is golden and fragrant.
Plate the salmon alongside the sweet potato mash and green beans, finishing with a fresh squeeze of lemon juice.
