Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with garlicky mashed cauliflower and steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
7.2 oz Wild Atlantic Salmon
1.5 cups Cauliflower florets
1 cup Green beans
2 tsp Extra virgin olive oil
1 clove Garlic
1 tbsp Lemon juice
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and cook until very tender, about 10-12 minutes.
Add the green beans to the steamer for the last 5 minutes of cooking until they are crisp-tender.
Transfer the cooked cauliflower to a bowl with minced garlic and half of the olive oil, then mash until smooth or use an immersion blender for a creamier texture.
Pat the salmon fillet dry with a paper towel and season with a pinch of salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the fish is cooked through to your preference.
Plate the salmon alongside the garlic mashed cauliflower and steamed green beans, finishing the entire dish with a fresh squeeze of lemon juice.
