Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with garlic mashed cauliflower and tender steamed green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
7 oz Salmon Fillet
2 cups Cauliflower florets
1.5 cups Green beans
2 tsp Ghee
2 cloves Garlic, minced
1 tbsp Lemon juice
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of the cauliflower cooking time until they are bright green and crisp-tender.
While the vegetables steam, pat the salmon fillet dry with a paper towel and season with sea salt and black pepper.
Heat one teaspoon of ghee in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower to a bowl or food processor, adding the remaining teaspoon of ghee, minced garlic, and a pinch of salt.
Mash or blend the cauliflower until smooth and creamy.
Plate the garlic mashed cauliflower alongside the steamed green beans and the seared salmon.
Drizzle the entire dish with fresh lemon juice before serving.
