Preheat your oven to 400°F and line a baking sheet with parchment paper.
Dice the Yukon gold potato into small cubes and toss them in a bowl with the olive oil, half of the sea salt, and half of the black pepper.
Spread the potatoes on the baking sheet and roast for 15 minutes.
While the potatoes roast, finely dice the onion and mince the garlic.
In a medium bowl, combine the ground beef, quick oats, egg, onion, garlic, 1 tablespoon of tomato paste, dried thyme, and the remaining salt and pepper.
Mix the ingredients well and shape into a compact individual loaf.
Remove the baking sheet from the oven, push the potatoes to one side, and place the meatloaf on the other side.
Spread the remaining 1 tablespoon of tomato paste over the top of the meatloaf to create a glaze.
Return the sheet to the oven and bake for 25 to 30 minutes until the meatloaf is cooked through and the potatoes are tender and golden.
