INGREDIENTS
6 ounces Wild Atlantic Salmon Fillet
1.5 cups Cauliflower Florets
1 cup Broccoli Florets
1 tablespoon Grass-fed Ghee
1 clove Garlic, minced
Fresh dill and sea salt to taste
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 5 minutes of steaming the cauliflower, add the broccoli florets to the steamer basket until tender-crisp and bright green.
Transfer the steamed cauliflower to a food processor or blender with half of the ghee, minced garlic, fresh dill, and a pinch of sea salt, then process until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt.
Heat the remaining ghee in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes until cooked to your preference.
Plate the herb-cauliflower mash and steamed broccoli alongside the seared salmon and serve immediately.
