PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Peel and cube the sweet potato into 1-inch pieces, then toss them on the pan with half of the olive oil and a pinch of salt.
Roast the sweet potatoes for 10 minutes while you prepare the chicken.
In a small bowl, whisk together the remaining olive oil, minced garlic, oregano, thyme, salt, and pepper.
Pat the chicken breast dry with a paper towel and coat it thoroughly with the garlic-herb mixture.
Move the sweet potatoes to one side of the pan, then add the chicken and broccoli florets to the other side.
