PREPARATION
Heat one teaspoon of olive oil in a non-stick skillet over medium heat.
Sauté the diced bell peppers and smoked turkey until the peppers are tender and the turkey is slightly browned.
Add the spinach to the skillet and cook until just wilted, then remove the mixture and set aside.
Wipe the skillet clean, add the remaining teaspoon of oil, and pour in the whisked egg whites.
