Grilled Steak with Roasted Asparagus
Juicy grass-fed sirloin grilled to perfection and served with crisp-tender roasted asparagus spears finished with a bright squeeze of fresh lemon.
INGREDIENTS
6 oz top sirloin steak
1 cup asparagus
1 tbsp extra virgin olive oil
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp garlic powder
1 tsp lemon juice
PREPARATION
Preheat your outdoor grill or indoor grill pan to medium-high heat and preheat your oven to 400°F.
Trim the woody ends off the asparagus and place the spears on a parchment-lined baking sheet.
Drizzle the asparagus with 0.5 tbsp of olive oil and season with a pinch of sea salt and black pepper.
Roast the asparagus in the oven for 12-15 minutes until tender and slightly charred.
While the asparagus roasts, rub the sirloin steak with the remaining 0.5 tbsp of olive oil, garlic powder, and the remaining salt and pepper.
Place the steak on the hot grill and cook for 4-5 minutes per side for medium-rare, or until it reaches your desired level of doneness.
Remove the steak from the grill and let it rest on a cutting board for at least 5 minutes to lock in the juices.
Remove the asparagus from the oven and drizzle with fresh lemon juice.
Slice the steak against the grain and serve alongside the roasted asparagus.
