Seared Salmon with Steamed Asparagus and Cauliflower Mash
Pan-seared salmon served with tender steamed asparagus and creamy cauliflower mash, finished with a squeeze of fresh lemon and a sprinkle of flaky sea salt.
INGREDIENTS
7.2 ounces Salmon Fillet
1 cup Asparagus spears
2 cups Cauliflower florets
1 clove Garlic, minced
1 tablespoon Lemon Juice
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
During the last 4 minutes of steaming the cauliflower, add the asparagus spears to the steamer basket until they are bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of salt and black pepper.
Heat a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the skin is crispy and the flesh is opaque.
Transfer the steamed cauliflower to a bowl or blender, add the minced garlic and lemon juice, and mash or blend until smooth and creamy.
Serve the seared salmon over a bed of cauliflower mash with the steamed asparagus on the side.
