PREPARATION
Combine the parsley, garlic, and lemon zest in a small bowl to create the gremolata.
Pat the sardines dry and season both sides with sea salt and black pepper.
Heat half of the olive oil in a large skillet over medium-high heat until shimmering.
Place sardines in the pan and sear for 3 minutes per side until the skin is crisp and golden.
Remove sardines from the pan, add the remaining oil, and quickly sauté the spinach with red pepper flakes until wilted.
