Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy garlic-infused cauliflower mash with a side of crisp-tender green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.8 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Green Beans
1 tsp Olive Oil
1 tsp Grass-fed Butter
1 tbsp Nonfat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for about 10-12 minutes until very tender.
While the cauliflower steams, pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes on the first side until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through, then remove from the pan and let it rest.
In the same skillet, add the green beans and minced garlic with a splash of water, sautéing for 4-5 minutes until the beans are crisp-tender.
Transfer the steamed cauliflower to a bowl and mash thoroughly with the Greek yogurt and butter until creamy and smooth.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
