PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.

Heat olive oil in a skillet over medium-high heat and sear the chicken for 6-7 minutes per side until the internal temperature reaches 165°F.
Transfer the steamed cauliflower to a food processor or high-speed blender.
Add the ghee, Greek yogurt, garlic cloves, and the remaining salt, pepper, and herbs to the processor.
Blend on high until the mixture is completely smooth and reaches a velvety, whipped consistency.
