INGREDIENTS
1.75 cups Non-fat Greek yogurt
1 medium Honeycrisp apple
0.25 cup Rolled oats
1 tbsp Chopped walnuts
1 tbsp Hemp hearts
1 tsp Ground cinnamon
1 tsp Vanilla extract
1 tsp Maple syrup

PREPARATION
Preheat your oven to 375°F and lightly grease a small baking dish.
Core the Honeycrisp apple and slice it into thin, uniform wedges.
In a small bowl, toss the apple slices with the vanilla extract and half of the ground cinnamon until well coated.
In a separate mixing bowl, combine the rolled oats, chopped walnuts, hemp hearts, maple syrup, sea salt, and the remaining cinnamon to create the streusel.
Arrange the seasoned apples in the prepared baking dish and sprinkle the oat streusel mixture evenly over the top.
Bake for 20 to 25 minutes until the apples are tender and the topping is golden and crisp.
Spread the cold Greek yogurt into a serving bowl and top with the warm baked apples and all of the crunchy streusel bits.
