PREPARATION
Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper.
Peel and dice the sweet potato into 1/2-inch cubes, then toss with half the olive oil, salt, and pepper on the pan.
Roast the sweet potatoes for 15 minutes until they begin to soften.
While potatoes roast, pat tilapia dry and season both sides with garlic powder, smoked paprika, and remaining salt and pepper.
Move potatoes to one side of the pan, add green beans and tilapia fillets, drizzling the remaining oil over the beans.
Bake for another 12-15 minutes until the fish is opaque and flakes easily with a fork.
