Lemon Herb Grilled Salmon with Asparagus
Tender salmon fillets grilled with a bright lemon-herb marinade and served alongside charred, snap-crisp asparagus spears.
INGREDIENTS
7 oz salmon fillet
1 cup asparagus
0.5 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
0.5 tsp lemon zest
1 tsp fresh dill
1 tsp fresh parsley
0.25 tsp sea salt
0.25 tsp black pepper
1 clove garlic
PREPARATION
Preheat your grill or a heavy grill pan over medium-high heat.
In a small mixing bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, chopped dill, and chopped parsley to create the marinade.
Pat the salmon fillet dry with a paper towel and season both the salmon and the trimmed asparagus spears with sea salt and black pepper.
Brush half of the prepared lemon-herb marinade generously over the salmon fillet and the asparagus.
Place the salmon on the grill skin-side down and cook undisturbed for 4-5 minutes.
Add the asparagus to the grill alongside the salmon, turning the spears occasionally until they are tender and show light char marks.
Carefully flip the salmon and cook for an additional 3-4 minutes, or until the internal temperature reaches 145°F and the fish flakes easily with a fork.
Remove the salmon and asparagus from the grill and drizzle with the remaining lemon-herb marinade before serving immediately.
