Seared Salmon with Garlic Green Beans and Mashed Cauliflower
Pan-seared salmon served over silky cauliflower mash and garlic-sautéed green beans, finished with a bright squeeze of lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon
300g Cauliflower Florets
1 cup Green Beans
2 tbsp Non-fat Plain Greek Yogurt
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, heat olive oil in a skillet over medium heat and sauté the green beans and minced garlic until the beans are crisp-tender.
Season the salmon fillet with salt and pepper, then sear in a separate non-stick pan over medium-high heat for 4-5 minutes per side until the skin is crispy and the fish is cooked through.
Drain the steamed cauliflower thoroughly and place in a blender or food processor with the Greek yogurt and ghee.
Pulse the cauliflower mixture until smooth and creamy, seasoning with a pinch of salt if desired.
Plate the salmon over the cauliflower mash with the garlic green beans on the side, and finish with a fresh squeeze of lemon juice.
