6 oz Salmon Fillet
1.5 cups Cauliflower florets
1.1 cups Broccoli florets
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced

PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While the cauliflower steams, pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until crispy, then flip and cook for another 3 minutes until opaque.
Remove the salmon and let it rest while you sauté the broccoli and minced garlic in the remaining oil in the same skillet until the broccoli is bright green and tender-crisp.
Drain the steamed cauliflower and transfer to a blender or food processor; blend with a pinch of salt and a splash of lemon juice until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic broccoli on the side with an extra squeeze of lemon.
